A real classic of a dessert.
1/2 cup crushed cookies
melted butter
1 box yellow cake mix
1 cup vanilla-flavored dessert pudding
2 tablespoons condensed milk
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
( we used Hershey's Semi-Sweet
Chocolate baking chips)
2 tablespoons butter
1 To make pie crust, mix the crushed cookies with melted butter. Press onto the bottom of a 6-cup muffin pan. Chill for 15 minutes.
2 Preheat oven to 350F. Prepare and bake cake mix batter according to package directions. Cool and remove from pans.
3 To make the custard filling, mix vanilla-flavored dessert pudding, condensed milk, and vanilla extract. Chill for 15 minutes.
4 To make the chocolate frosting, microwave semi-sweet chocolate baking chips and butter for 30 seconds or until melted. Stir. Slice cupcakes in half, crosswise. Frost the top half with chocolate mixture, and spoon custard onto the bottom half. Sandwich together.
