Breaded Pork Chops with Cranberry-Raisin Sauce

Not in the mood to make the sauce from scratch? Ready-made cranberry jelly is available in most supermarkets and goes well with pork chops too.

1 kilo pork chops
1 pack pork chop seasoning and breading mix
2 eggs, slightly beaten
breadcrumbs
cooking oil for frying

For the Cranberry-Raisin Sauce
1/2 cup dried cranberries
1/4 cup raisins
2 tablespoons orange concentrate
1 cup water
1/4 cup sugar
2 teaspoons cornstarch mixed with 1 teaspoon water as thickener

 

1  Prepare the pork chops: Coat pork chops in breading mix. Dip in egg, then breadcrumbs. Deep-fry in hot oil and drain on paper towels.

2  Prepare the Cranberry-Raisin Sauce: Mix all ingredients together (except for cornstarch mixture) in a small saucepan. Put on medium flame, stirring consistently and crushing berries to extract flavor. hen mixture turns a little syrupy, add in thickening mixture in a stream until a jam-like consistency is achieved. Add more if necessary.

Serve with cranberry-raisin sauce and mashed potatoes.
