Herbs are a good source of flavor and have amazing health benefits. Dried herbs have a more distinct flavor, but if you want to use fresh herbs, double the amount in this recipe. Skip the salt or just add a pinch to make it a low-sodium meal. Serve with Tofu Kebabs with Cilantro Sauce and Brown Rice Salad.

Prep Time 15 minutes
Cooking Time 20 minutes
1 kilo skinless chicken breast fillets
2 tablespoons olive oil
salt, to taste
1/4 cup fresh parsley, chopped
1 tablespoon dried rosemary
1 tablespoon dried tarragon
1 tablespoon dried thyme
2 tablespoons minced garlic
1 teaspoon ground black pepper
1 Drizzle each chicken fillet with olive oil then season with salt. Set aside.
2 In a bowl, combine parsley, rosemary, tarragon, thyme, garlic, and black pepper.
3 Coat chicken on one side with the herb mixture. Place chicken on a baking sheet, herb-side up.
4 Bake chicken in a turbo broiler set to 250ºC. Broil for 20 minutes or until cooked through. Serve with brown rice and vegetables or a salad.
