Adding this healthy starch doesn't just add texture to your spread, but cuts the richness of your decadent mains.
Serves 6 to 8

Cooking Time 30 minutes
1 cup brown rice
1/3 cup butter
1/2 cup chopped onions
salt and freshly ground pepper, to taste
4 to 4 1/2 cups water or chicken broth
1/4 cup finely chopped spring onions,
white and green parts only
1/2 teaspoon finely ground pepper
1 Wash brown rice several times until water runs clear; set aside.
2 In a sauté pan, melt butter. Add chopped onions and cook until translucent. Season with salt and pepper.
3 Add brown rice and season lightly. Pour in 4 to 4 1/2 cups water or chicken broth. Bring to a boil. Reduce heat to low and simmer, covered, for 20 to 30 minutes. Cook until rice is tender. Drain well.
4 Toss in finely chopped spring onions and ground pepper. Taste and adjust seasoning. Serve while hot.
