Adding this healthy starch doesn't just add texture to your spread, but cuts the richness of your decadent mains.

Serves 6 to 8

1 cup brown rice
1/3 cup butter
1/2 cup chopped onions
salt and freshly ground pepper, to taste
4 to 4 1/2 cups water or chicken broth
1/4 cup finely chopped spring onions,
      white and green parts only
1/2 teaspoon finely ground pepper

1  Wash brown rice several times until water runs clear; set aside.

In a sauté pan, melt butter. Add chopped onions and cook until translucent. Season with salt and pepper.

Add brown rice and season lightly. Pour in 4 to 4 1/2 cups water or chicken broth. Bring to a boil. Reduce heat to low and simmer, covered, for 20 to 30 minutes. Cook until rice is tender. Drain well.

Toss in finely chopped spring onions and ground pepper. Taste and adjust seasoning. Serve while hot.
