Brown Rice Salad

Brown Rice Salad

Enjoy the healthy goodness of whole grains and dried fruits in this sumptuous rice salad. Eat it as is or serve as a side dish to roasted or grilled meats such as the Broiled Herb- Crusted Chicken Fillets.

Serves 5 Prep Time 30 minutes Cooking Time 30 minutes

 

2 cups brown rice, cooked according
       to package directions and cooled
1/4 cup raisins
1/4 cup cashew nuts, chopped coarsely
1/4 cup dried mangoes, cut into thin strips
1 big red bell pepper, cut into small cubes

For the dressing
3 tablespoons red wine vinegar
1/4 cup olive oil
3 tablespoons honey
1 tablespoon brown sugar
salt and pepper, to taste

 

1  In a bowl, combine brown rice, raisins, cashew nuts, dried mangoes, and red bell pepper.

Make the dressing: In a separate bowl, whisk together red wine vinegar, olive oil, honey, and brown sugar. Season with salt and pepper.

Toss together brown rice mixture and dressing right before serving. The rice salad can be served warm or at room temperature.

Brown rice cooking tip: The amount of water used for cooking brown rice varies from brand to brand. Check package directions before cooking.
