Enjoy the healthy goodness of whole grains and dried fruits in this sumptuous rice salad. Eat it as is or serve as a side dish to roasted or grilled meats such as the Broiled Herb- Crusted Chicken Fillets.
Serves 5 Prep Time 30 minutes Cooking Time 30 minutes
2 cups brown rice, cooked according
to package directions and cooled
1/4 cup raisins
1/4 cup cashew nuts, chopped coarsely
1/4 cup dried mangoes, cut into thin strips
1 big red bell pepper, cut into small cubes
For the dressing
3 tablespoons red wine vinegar
1/4 cup olive oil
3 tablespoons honey
1 tablespoon brown sugar
salt and pepper, to taste
1 In a bowl, combine brown rice, raisins, cashew nuts, dried mangoes, and red bell pepper.
2 Make the dressing: In a separate bowl, whisk together red wine vinegar, olive oil, honey, and brown sugar. Season with salt and pepper.
3 Toss together brown rice mixture and dressing right before serving. The rice salad can be served warm or at room temperature.
Brown rice cooking tip: The amount of water used for cooking brown rice varies from brand to brand. Check package directions before cooking.
