Imagine this: buffalo wings and shredded lettuce (like a taco!) doused with yogurt (or ranch dressing) wrapped in a tortilla. Muy delicioso!
Serves 6 Prep Time 20 minutes Cooking Time 30 minutes
For the buffalo chicken
1/2 kilo boneless chicken thighs, cut into bite-size pieces
2 tablespoons soy sauce
1 tablespoon chicken powder
salt and pepper, to taste
1/4 cup tomato sauce
3 tablespoon hot sauce (optional)
1 egg
1/2 cup all-purpose flour
1/2 cup cornstarch
oil for frying
1 cup tomato sauce
3 tablespoons hot sauce (optional)
6 small-size flour tortillas
1 whole cucumber, seeded and chopped
2 cups lettuce, shredded
yogurt or ranch dressing for topping
grated cheese
1 Make the buffalo chicken: In a bowl, combine soy sauce, chicken powder, salt and pepper, tomato sauce, and hot sauce, if desired. Add chicken pieces. Add egg.
2 Heat oil. Dredge chicken pieces in flour and cornstarch. Fry chicken until golden brown. Immediately coat with buffalo, drip excess coating.
3 To assemble, lay tortilla on a flat surface. Place chicken, lettuce, and a dollop of yogurt. Sprinkle with cheese.
