Serves 5 to 6 Prep Time 10 minutes Cooking Time 15 minutes
2 (500-gram) fillets SARANGANI BAY Prime Cream Dory
For the cajun rub
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon paprika
1/2 teaspoon pepper
1 teaspoon salt
For tropical fruit salsa
flesh from 1 ripe mango, cubed
1 cup ripe papaya, cubed
1 cup ripe pineapple, cubed
1 red chili pepper, seeded, finely chopped
1 tablespoon fish sauce (patis)
1 tablespoon lime juice
2 tablespoons cilantro (wansoy), chopped
1 Mix herbs, spices, salt and pepper. Brush fish with 1 teaspoon olive oil and coat lightly in spice mixture.
2 Heat the remaining oil in an oven-proof fry pan over medium heat. Cook fish for about 2 minutes on one side, then turn and cook for 1 minute. Transfer pan to oven for 3-5 minutes until cooked. Serve with tropical fruit salsa.
