Add some whimsy to your holiday spread by making and designing your own cake lollipops.

For the cream cheese frosting
1/2 cup cream cheese, at room temperature
2 tablespoons butter, softened
2 tablespoons confectioners’ sugar, sifted
1 (9-inch) rum cake or butter cake, sliced
1 1/2 cups (about 300 grams) chocolate, melted
lollipop sticks
1 (6x6-inch) piece Styrofoam board, covered in plastic wrap
For decorating
white chocolate, melted
bittersweet chocolate, melted
candy sprinkles
chopped nuts
green or red chocolate compound, melted
1 Make the cream cheese frosting: Mix together cream cheese, butter, and confectioners' sugar in a bowl until light and fluffy.
2 Gradually add cake slices, mash in frosting, and mix together.
3 Form mixture into 1-inch balls. Freeze for 1 to 2 hours.
4 Dip cake ball bottoms in melted chocolate. Insert lollipop sticks halfway through. (The chocolate holds the lollipop sticks firmly in place.) Stick pops into the styrofoam board. Let chocolate cool and harden.
5 Dip cake pops into melted chocolate of your choice, covering completely. Let excess drip back into the bowl.
6 To decorate, sprinkle with desired décor such as candy sprinkles or nuts. Once the chocolate becomes firm and dry, you can also drizzle the cake pops with melted chocolate in a contrasting color.
7 Stick into the styrofoam board and place in the chiller until ready to serve. To give as gifts, wrap in clear plastic and tie with ribbon.
Substitution tip: You can also use banana cake, chocolate cake, or even leftover pancakes for this recipe! Store-bought cream cheese frosting can also be used.
