Kiddie chocoholics will love this choco-banana treat!
Yield 12 cupcakes Prep Time 25 minutes Cooking Time 90 minutes
1 stick unsalted butter, softened
1 cup white sugar
2 large eggs
1 1/4 cups all-purpose flour or whole-wheat flour
1/4 cup cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 cup very ripe bananas, mashed
1/2 cup sour cream
1 teaspoon vanilla extract
1/2 cup chocolate chips
1 Preheat oven to 350ºF. Butter cupcake molds.
2 With an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs, beating well.
3 Sift the dry ingredients together and combine with the butter mixture. Blend well.
4 Add the bananas, sour cream, and vanilla extract. Stir well. Add the chocolate chips and pour into the prepared pan.
5 Bake for 1 hour or until a cake tester comes out clean. Turn out onto a rack to cool.
6 Dust with powdered sugar if desired.
