Chicken Caesar gets a fruity twist with the addition of sweet, ripe mangoes. Keep the kids guessing by offering a variation using canned tuna instead of chicken.
Serves 3 to 4 Prep Time 20 minutes Cooking Time 10 minutes
1 1/2 cups cooked and cubed chicken breast
1 tablespoon chopped spring onions
1/2 cup store-bought Caesar dressing
1/4 cup mayonnaise
1 mango, sliced into strips
3 to 4 hotdog buns, split
1/2 cup alfalfa sprouts
1 In a bowl, toss together chicken cubes, spring onions, Caesar dressing, and mayonnaise. Chill until ready to serve.
2 To assemble: Arrange mango slices on the bottom half of a hotdog bun. Fill with chicken mixture. Top with alfalfa sprouts and top half of hotdog bun. Repeat to make a total of three to four sandwiches.
