With just a few ingredients, you can have a soup that's hearty, healthy, and light—a perfect match for a heavy sandwich like the Asian Pork Belly Bun.
Serves 4 Prep Time 7 minutes Cooking Time 12 minutes
1 tablespoon butter
1 tablespoon olive oil
1 small yellow onion, minced
1/2 head cabbage, chopped to bite-sized pieces
4 cups chicken stock
1 block firm tofu, sliced into 1x1-inch cubes
salt and pepper, to taste
1 In a pot, heat butter and oil. Add onion and sauté until soft and translucent.
2 Add cabbage and sauté until soft and wilted.
3 Pour in chicken stock. Taste and adjust seasoning.
4 Gently add tofu and simmer for a minute. Serve.
