6 chicken tenders
2/3 cup flour
2 eggs, beaten
2/3 cup panko or coarse breadcrumbs
1/3 cup Parmesan cheese
1 tablespoon dried oregano
1 tablespoon dried thyme
2 tablespoons butter
3 tablespoons freshly squeezed lemon juice
salt and pepper
1 Cut each chicken tender horizontally in half, creating 2 pieces; season.
2 Roll tenders in flour, dip in egg, and roll in a mixture of breadcrumbs, Parmesan, oregano, and thyme. Transfer to a plate.
3 Melt butter in a pan over medium-high heat.
4 Cook tenders on both sides until golden brown, about 3 minutes on each side. Transfer cooked tenders to a plate.
5 Remove pan from heat and add lemon juice. Stir for a few seconds to loosen brown bits; let the juice reduce. Drizzle a few drops over each tender and season with salt.
