Hungry? This saucy, no-fuss chicken sandwich can be prepped in no time.
Serves 3 to 4

2 cups cooked or leftover chicken, shredded
2 small baguettes, slice horizontally in half
2 tablespoons oil
half an onion, sliced thinly
1/2 cup store-bought barbecue sauce
1/4 cup water
1 teaspoon brown sugar
1 tablespoon ketchup
1 tablespoon mustard
2 cheese slices
1 In a skillet, sauté chicken and onion in oil.
2 Add barbecue sauce, water, brown sugar, ketchup, and mustard; stir. Simmer, covered, for 5 minutes.
3 Place filling in between baguette slices and top with cheese.
4 Toast lightly until golden, about 1 to 2 minutes.
