Chilled Avocado Soup



Chilled Avocado Soup

This fruity cold soup makes for a refreshing start to a satisfying meal, says top chef Sau del Rosario. It’s smooth and creamy, and it goes well with a hearty salad or sandwich.

Serves 2 to 4  Prep Time 15 minutes plus 4 hours chilling time

 

3 ripe avocados
1 cup chicken broth
1 cup half-and-half (if unavailable, use either milk or cream)
1 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon white or black pepper
1 teaspoon lemon juice

 

1  Cut avocados in half, remove seeds, and peel them.

2  Place avocados with chicken broth, onion powder, and pepper in a blender or food processor and purée until smooth.

3  Stir in half-and-half. Pour mixture into a covered bowl. Cover and chill for at least 4 hours.

4  Just before serving, stir in lemon juice. Serve cold.
