Crunch, crunch, crunch! Turn kids’ fave A.M. chow into this outrageously easy and perfectly portable treat.
Makes 12 bars
250 grams bittersweet chocolate, chopped coarsely
3 to 4 cups plain cornflakes
1 cup chopped walnuts (or any nuts of your choice)
oil or melted butter for greasing
candy sprinkles for topping
melted colored chocolate for drizzling
1 Place the chopped chocolate in a microwave-safe bowl and heat for 1 minute. Remove and stir until melted.
2 In another bowl, combine the cornflakes and walnuts. Add the melted chocolate and mix well until cereal is fully coated.
3 Line a lightly greased 8-by-8-inch pan with parchment paper, making sure to leave a 2-inch overhang on each side. Transfer the chocolate-cereal mixture to the pan, making sure it is even and compact. Use another piece of parchment paper to press down on the mixture so it won’t stick to your hands.
4 Decorate with candy sprinkles on top and drizzle with melted colored chocolate.
5 Let cool and chill in the refrigerator for 2 hours or until set.
6 Lift the chocolate out of the pan using the parchment paper overhangs. Cut into bars and serve.
Chunky tip: Other mix-ins to try: cookies (cut into chunks), mini marshmallows, and coarsely chopped chocolate candy-coated nuts!
