A pizookie (short for pizza-cookie) is cookie dough baked in a dish, served hot out of the oven with ice cream on top. To reheat, zap in the microwave for a few seconds, just until warm, then top with ice cream and serve immediately.

Makes 6 (4-inch) pizookies
Prep Time 20 minutes
Cooking Time 12 to 13 minutes
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons butter, melted
1/2 cup brown sugar
1/4 cup sugar
1 teaspoon vanilla extract
1 large egg
1/2 cup chocolate chips
1/2 cup coarsely chopped walnuts
ice cream, to serve
1 Preheat oven to 375ºF.
2 Sift flour, baking soda, and salt together. Set aside.
3 In the bowl of an electric mixer fitted with the paddle attachment, cream together melted butter and sugars until blended thoroughly.
4 Beat in vanilla and egg until combined. Mix in the sifted dry ingredients just until combined.
5 Gently stir in chocolate chips and nuts until evenly distributed.
6 Press cookie dough into 4-inch-wide ramekins or oven-proof containers.
7 Place ramekins on a cookie sheet and bake in the oven for 15 to 20 minutes. The tops of the pizookies should be dry to the touch and set.
8 Place ramekins on a wire rack to cool a bit, just until warm enough to handle. The centers will sink. Serve with a scoop of ice cream on top.
Baking tip: You can bake these in smaller or larger dishes if you like, just adjust the baking time accordingly and check for doneness.
