A treat for the chocoholic! Have a little warm-and-cold dessert by pairing this with vanilla ice cream on the side. Heavenly!
Serves 2 to 3 Prep Time 10 minutes Cooking Time 2 minutes Baking Time 15 minutes
1 cup semisweet chocolate chips
1/2 tablespoon oil
3 tablespoons unsweetened cocoa powder
2 egg whites (Learn How to Separate an Egg here)
1/4 cup brown sugar
whipped cream for garnish
1 Preheat oven to 350F.
2 Microwave chocolate chips and oil in a microwaveable bowl on HIGH for 1 to 2 minutes or until completely melted. Stir in cocoa powder. Let stand for 5 minutes.
3 Using an electric mixer, beat egg whites with sugar on high speed until fluffy or tripled in volume. Reduce speed to medium.
4 Blend in chocolate mixture. Mix until just combined.
5 Spoon batter into 2 to 3 muffin cups until 2/3 full.
6 Bake for 15 minutes or until puffed and center is set. Remove from oven. Let stand for 3 minutes.
7 Serve with whipped cream on top.
