Don't forget the veggies! This weekend, cook up creamy, cheesy, leafy greens.Serves 4 Prep Time 10 minutes Cooking Time 10 minutes2 tablespoons butter1 tablespoon minced onion2 cups fresh spinach leaves1 tablespoon all-purpose flour1/2 cup milk1/2 cup cream2 tablespoons grated Parmesan cheesesalt and pepper to taste1 In a sauté pan, melt butter on medium heat.2 Add the onion and cook until translucent. Add the spinach and cook until slightly wilted.3 Add the flour and stir.4 Gradually add the milk, then the cream.5 Add Parmesan cheese. Bring to a gentle simmer until mixture has thickened and spinach is cooked. Season with salt and pepper.
