Don't forget the veggies! This weekend, cook up creamy, cheesy, leafy greens.
Serves 4 Prep Time 10 minutes Cooking Time 10 minutes
2 tablespoons butter
1 tablespoon minced onion
2 cups fresh spinach leaves
1 tablespoon all-purpose flour
1/2 cup milk
1/2 cup cream
2 tablespoons grated Parmesan cheese
salt and pepper to taste
1 In a sauté pan, melt butter on medium heat.
2 Add the onion and cook until translucent. Add the spinach and cook until slightly wilted.
3 Add the flour and stir.
4 Gradually add the milk, then the cream.
5 Add Parmesan cheese. Bring to a gentle simmer until mixture has thickened and spinach is cooked. Season with salt and pepper.
