Want a better way to snack? This rich yet light dip is so sumptuously good! Serve it with your favorite vegetable dippers like bell peppers, celery, and cucumber slices.
Serves 4 to 6 Prep Time 10 minutes
1 cup frozen chopped spinach, thawed and drained
1/2 cup nonfat sour cream
1 cup nonfat cottage cheese
1 teaspoon onion powder
1 teaspoon lemon juice
1/2 teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon black pepper
1 In a blender, combine spinach and sour cream; process until smooth.
2 Transfer mixture to a medium bowl, and add cottage cheese, onion powder, lemon juice, cayenne pepper, salt, and pepper. Mix well.
3 Transfer mixture to a serving bowl. Place bowl on a platter with your preferred vegetable sticks.
4 Serve immediately.
