Crunchy Kani Sticks with Apricot Mayo Sandwich

Crispy with a hint of fruity sweetness, this sandwich will surely satisfy your little one’s tummy come recess time.

Serves 2 to 3  Prep Time 20 minutes  Cooking Time 10 minutes

 

For the apricot mayo
1/2 cup mayonnaise
1/4 cup apricot jam

8 pieces crabsticks
3/4 cup all-purpose flour
1 egg, beaten
1/3 cup mayonnaise
1 1/2 cups Japanese breadcrumbs
canola oil for deep-frying
4 to 6 slices white bread
nori strips for garnish

 

Make the apricot mayo: Mix together mayonnaise and jam very well. Set aside in the chiller.

2  Dredge crabsticks in flour, then coat in egg. Do this twice then coat with breadcrumbs.

3  Deep-fry breaded crabsticks over medium heat until golden brown. Drain on paper towels.

4  To assemble sandwich, spread apricot mayo on a bread slice. Top with crabsticks and nori strips. Spread a little more apricot mayo on another bread slice and place on top to make a sandwich.
