This festive fried rice is loaded with an explosion of flavors, from the savory chorizo and shrimp to the juicy pineapple bits and fresh green onions. It's a surefire hit! Fill up a huge platter and watch it disappear.
Serves 5 to 7 Prep Time 12 minutes Cooking Time 20 minutes
1 tablespoon cooking oil
2 pieces Chinese sausage or chorizo de Bilbao, sliced into small pieces
1 tablespoon minced garlic
1 large onion, minced
1 large carrot, diced
1/4 kilo shrimp, peeled and deveined
8 cups cooked rice, fluffed
1 teaspoon soy sauce
1/4 teaspoon ground black pepper
1 bunch green onion, sliced finely
1 cup pineapple tidbits, drained
1 In a large pan or wok, drizzle oil and cook Chinese sausage on medium-high heat for about 4 minutes. Push to the side of the pan. Add garlic and sauté until light golden brown. Add onions and cook for a minute more. Add carrots; cook for 3 minutes. Add shrimp and cook until red-orange in color.
2 Add rice, soy sauce, and ground black pepper. Stir-fry over high heat for 10 to 12 minutes.
3 Add green onions and pineapple tidbits. Serve hot.
