Fiesta Fried Rice with Green Onions and Pineapple Bits

This festive fried rice is loaded with an explosion of flavors, from the savory chorizo and shrimp to the juicy pineapple bits and fresh green onions. It's a surefire hit! Fill up a huge platter and watch it disappear.

Serves 5 to 7

Cooking Time
20 minutes

 

1 tablespoon cooking oil
2 pieces Chinese sausage or
      chorizo de Bilbao, sliced into small pieces
1 tablespoon minced garlic
1 large onion, minced
1 large carrot, diced
1/4 kilo shrimp, peeled and deveined
8 cups cooked rice, fluffed
1 teaspoon soy sauce
1/4 teaspoon ground black pepper
1 bunch green onion, sliced finely
1 cup pineapple tidbits, drained

 

1  In a large pan or wok, drizzle oil and cook Chinese sausage on medium-high heat for about 4 minutes. Push to the side of the pan. Add garlic and sauté until light golden brown. Add onions and cook for a minute more. Add carrots; cook for 3 minutes. Add shrimp and cook until red-orange in color.

Add rice, soy sauce, and ground black pepper. Stir-fry over high heat for 10 to 12 minutes.

3  Add green onions and pineapple tidbits. Serve hot.
