Inspired by the Spanish Tortilla de Patatas, this is a great, savory breakfast.
1 onion, cut into strips
1 small red bell pepper, cut into strips
1 small green bell pepper, cut into strips
salt to taste
100 grams french fries
2 medium-sized eggs
1 Heat oil in a skillet. Sauté onions, bell peppers, and fries. Drain on paper towels. Sprinkle with salt.
2 Whisk eggs in a bowl, then pour into a skillet.
3 Place the french fry mixture on one side of the egg, then fold the other half to cover, creating a half-moon shape.
4 Turn over and cook for about half a minute more. Serve.
Healthy tip: Make a healthier version by using the whites of four eggs instead of two whole eggs, and frying with olive oil.
