Fruit Compote with Low-fat Yogurt and Granola Topping

This healthy and and refreshing fruit concoction is a real palate teaser with a lot of textures and flavors you will definitely enjoy!

Serves 6  Prep Time 12 minutes  Cooking Time 1 hour

 

For the compote
1 1/2 cups apple purée, made from 2 to 3 apples
sliced ginger, half-an-inch piece
2 pears, quartered then sliced
2 apples, quartered then sliced
1/2 tablespoon lemon juice
1 tablespoon orange liquor
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup sliced dried apricots
1/4 cup sliced dried figs
1/4 cup dried cranberries
1/2 to 3/4 cup low or nonfat yogurt

For the granola topping
3/4 cup old-fashioned or rolled oatmeal
1/2 cup coarslet chopped walnuts
1/3 cup raisins
2 tablespoons honey
1/2 teaspoon cinammon

 

Spread old-fashioned or rolled oatmeal, walnuts, and raisins on a baking tray. Set aside.

2  In a saucepan, combine honey,  canola oil, and cinnamon, and bring to a boil.

3  Pour over oatmeal mixture and mix well until evenly coated.

4  Bake in a preheated 350ºF oven for 25 to 30 minutes, stirring once in a while until mixture is golden brown. Cool on pan and crumble into small pieces.

5  While granola is baking, place all the ingredients for the compote in a medium saucepan and mix gently. Poach at low heat until fruits become soft but remain intact. This will take about 30 minutes.

6  To assemble, arrange fruits in a wide mouth tall glass until one-thirds full. Pour yogurt and top with granola. Repeat layers once or twice if desired. Serve chilled.

    I read this recipe twice, thrice even four times and I am not able to see the amount of canola oil used for the granola topping. Would an estimate 1/4 C oil be fine with this? Thanks.
