Introduce new citrus flavors to your desserts with this recipe duo.
Serves 6 to 8
For the cake
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup creamy or plain yogurt
4 eggs
1 cup freshly squeezed grapefruit juice
1 to 2 tablespoons grapefruit zest
1/2 teaspoon vanilla extract
1/2 cup vegetable oil
For the frosting
1 (8-ounce) bar cream cheese, softened
2 tablespoons grapefruit juice
1 tablespoon grapefruit zest
3/4 cup confectioners' sugar
1 Preheat oven to 350ºF.
2 In a bowl, sift together flour, baking powder, and salt. In another bowl, whisk yogurt, sugar, eggs, juice, zest, and vanilla extract. Slowly whisk dry ingredients into the wet ingredients. Add oil; mix. Pour batter into a loaf pan. Bake for 40 to 50 minutes or until a cake tester placed in center of the cake comes out clean. Cool.
3 Prepare the frosting: Beat cream cheese, juice, zest, and confectioners' sugar until well incorporated. Place in a piping bag and frost away!
