Green Mango Jam

Green Mango Jam

The deep yet bright flavors of this rich, gooey jam goes winningly over crusty bread or wholewheat crackers and slices of cheese.

Makes 1 large mason jar  Prep Time 20 minutes  Cooking Time 45 minutes

1 kilogram large green mangoes, peeled and sliced
1/2 cup water
sugar (equal to weight of mango pulp)
juice from 1 lemon
green or yellow food coloring

1 Place the mango slices and water in a heavy-bottomed pan. Add sugar. Bring to a boil. Cook uncovered until it thickens, stirring constantly, about 25 minutes. Remove from heat.

Add lemon juice and about 6 drops of food coloring. Mix well. Return to fire. Bring to a boil and cook until a set is obtained (when the mixture has reached the thickness and consistency of jam), about 20 minutes. Cool.

Pour into jars and seal.

Storing tip  If you use sterilized jars, you can keep the jam at room temperature for up to a
year. If stored in unsterilized containers, it will keep for a month in the refrigerator.
