Cooking Time
8 to 12 minutes

1/4 cup store-bought char siu sauce, divided
1 1/2 tablespoons Shaohsing wine
2 teaspoons minced garlic
1/2 teaspoon black pepper
450 grams pork chops,
      sliced into 1/3-inch-thick pieces
1 tablespoon vegetable oil
stir-fried snow peas to serve (optional)

In a small bowl, combine 2 tablespoons char siu sauce, Shaohsing wine, garlic, and black pepper. Pour mixture over pork chops and marinate for at least 6 hours in the refrigerator.

Grill pork chops over medium hot coals or on an iron griddle. Brush the grates or the griddle with oil to prevent the pork chops from sticking.Brush both sides of pork chops with remaining char siu sauce while grilling. Cook for 4 to 6 minutes on each side or until pork chops are fully cooked. Serve with stir-fried snow peas.
