If your kids love pizza, good news! You can make them pita pizzas that they can bring to school!
Makes 4 mini pizzas
Prep Time 30 minutes
Total Cooking and Baking Time about 20 minutes
250 grams chicken fillet
1/2 cup store-bought
barbecue marinade
1 tablespoon vegetable oil
2 tablespoons olive oil
4 pieces pita bread
12 cherry tomatoes, sliced
1 cup grated cheese
8 basil leaves, torn
1 Marinate chicken fillet in barbecue marinade. Cover and chill in the refrigerator for at least 20 minutes. Take out the chicken a few minutes before cooking.
2 Cook the chicken: Heat a stovetop grill and brush with vegetable oil. When the grill is almost smoking, place chicken and grill for 4 minutes on each side. Once cooled, slice chicken into strips. Set aside.
3 Preheat oven to 400ºF to 450ºF.
4 Drizzle olive oil over the pita bread, then sprinkle with grated cheese and top with tomatoes.
5 Bake pizzas in the oven for 10 minutes or until cheese is melted. Remove from the oven and top with basil leaves and grilled chicken strips. Serve immediately.
