Why settle for one when you can indulge in three different kinds of cheese?
Serves 4
1/2 cup grated mozzarella cheese
1/2 cup grated queso de bola (edam cheese)
1/4 cup crumbled soft goat cheese (or kesong puti)
1/4 cup good-quality mayonnaise
1 teaspoon lemon juice
1/2 teaspoon minced garlic
8 bread slices (sourdough, French bread, or whole wheat)
4 slices smoked ham
4 slices salad tomato
12 basil leaves
2 tablespoon butter
1 Mix together mozzarella cheese, queso de bola, and goat cheese or kesong puti.
2 In another bowl, mix mayonnaise, lemon juice, garlic. Spread mayonnaise mixture on the insides of 8 bread slices. Arrange four bread slices and place 1 slice smoked ham, 1 slice salad tomato, and 3 basil leaves on each sandwich. Equally portion mixed cheeses and top each with remaining bread slices.
3 Melt 1 tablespoon butter in a heavy frying pan or grill pan and cook 2 sandwiches at a time until golden on both sides. Repeat with remaining sandwiches.
