This is one nutritious side dish that's been turned into a warm and chunky soup. Best served with Smoked Fish Baguette.

2 tablespoons butter
1 cup diced ham
1 medium yellow onion, minced
3 1/2 cups chicken stock, divided
2 1/2 cups frozen peas
1 teaspoon lemon juice
salt and pepper, to taste
sour cream for garnish
1 In a pot, heat butter until melted. Sauté ham and onion until onions are soft and translucent.
2 Pour in 1/2 cup chicken stock and simmer for 1 minute.
3 Add frozen peas and simmer until tender, about 5 minutes.
4 Place stock in a blender along with the remaining chicken stock and lemon juice. Purée until smooth.
5 Pour back in the pot and reheat. Taste and adjust seasoning.
6 Serve in bowls and finish each with a dollop of sour cream and several rounds of black pepper.
