Instead of pigging out on delivery after a stressful day, fix yourself this guilt-free, filling dinner. Carb-rich foods, like this, triggers the release of insulin to the bloodstream. It will definitely make you feel better on a really bad day.
Serves 1 to 2 Prep Time 15 minutes Cooking Time 10 minutes
150 grams linguine pasta
3 cloves garlic, chopped
3 tablespoons olive oil
2 tomatoes, cubed
1 zucchini, cubed
a handful of basil leaves and dill leaves, chopped
salt and pepper to taste
Parmesan cheese for garnish
1 Cook pasta according to package directions.
2 Meanwhile, saute garlic in olive oil in another skillet until fragrant. Add tomatoes and zucchini. Cook until vegetables are soft then add a basil leaves and dill. Toss in cooked pasta then season with salt and pepper to taste. Garnish with Parmesan cheese.
