Herb and Veggie Pasta

Instead of pigging out on delivery after a stressful day, fix yourself this guilt-free, filling dinner. Carb-rich foods, like this, triggers the release of insulin to the bloodstream. It will definitely make you feel better on a really bad day.

Serves 1 to 2 Prep Time 15 minutes Cooking Time 10 minutes

 

150 grams linguine pasta
3 cloves garlic, chopped
3 tablespoons olive oil
2 tomatoes, cubed
1 zucchini, cubed
a handful of basil leaves and dill leaves, chopped  
salt and pepper to taste
Parmesan cheese for garnish

 

Cook pasta according to package directions.

Meanwhile, saute garlic in olive oil in another skillet until fragrant. Add tomatoes and zucchini. Cook until vegetables are soft then add a basil leaves and dill. Toss in cooked pasta then season with salt and pepper to taste. Garnish with Parmesan cheese.
