Hoisin Beef Tenderloin and Lychee Stir-Fry

Beef and fruit together? For teens with a more sophisticated palate, give them a delightful surprise with this flavorful dish. On other days, switch the lychees with other fruit like mangoes or Mandarin oranges.

Serves 2 to 3  Prep Time 20 minutes  Cooking Time 20 minutes

 

For the stir-fry sauce
2 tablespoons hoisin sauce
1 tablespoon soy sauce
1 tablespoon water

1 1/2 cups (about 200 grams) beef tenderloin, cubed
salt and pepper
1 tablespoon canola oil
1/4 cup leeks, sliced diagonally
1/2 cup canned lychees, drained

 

Make the stir-fry sauce: Combine all ingredients in a small bowl and mix well.

Lightly season beef cubes with salt and pepper. Heat oil in a wok and sauté leeks. Add beef and sauté until almost cooked.

3 Add lychees and sauce; stir-fry until beef is cooked and sauce is syrupy.

Serve over Colorful Rice Pilaf.
