Breakfast sausages are easy to make at home. Two things to remember: keep the meat mixture cool as you work with it; and let it marinate for at least an hour in the refrigerator once you’ve combined all the seasonings.
Serves 6 Prep Time 1 hour 10 minutes (includes 1 hour inactive time for marination)
Cooking Time 10 to 15 minutes
For the sausage
1 kilo ground pork
2 teaspoons salt
2 teaspoons dried sage
2 teaspoons dried marjoram
teaspoons freshly ground black pepper
6 bagels, sliced in half and toasted
6 slices cheese
4 large tomatoes, sliced into rounds
4 eggs, scrambled, seasoned with salt and pepper
1 Combine all the ingredients for the sausage in a large bowl, mixing well with a fork. Cover with plastic wrap and place in the refrigerator for at least an hour before cooking.
2 Divide the mixture into 6 balls, and flatten into patties. Drizzle a medium-sized saucepan with oil and fry patties over medium heat. Set aside to cool slightly, then assemble the bagel sandwich, layering the patty with scrambled eggs, tomatoes and cheese. Serve immediately.
Spicing tip To make sure that your sausage mixture is properly flavored, fry a small portion in a saucepan. Add more of the different spices as needed.
