For Halloween, give your kids a real treat with these Homemade Marshmallows. Your little ones and their friends will surely ask for more!
Makes 10 to 12 medium pieces Prep Time 1 hour plus 2 hours setting time
1/4 cup water
1/2 cup light corn syrup
1 1/2 cups sugar
4 egg whites
2 tablespoons powdered gelatin
2 tablespoons cold water
1/2 teaspoon pure vanilla extract
black and orange food coloring
1 In a small bowl, dissolve gelatin in 2 tablespoons of cold water. Set aside.
2 Combine 1/4 cup water, corn syrup, and sugar in a saucepan fitted with a candy thermometer. Bring to a boil until "soft-ball" stage or about 235ºF.
3 Meanwhile, whip egg whites on medium speed until soft peaks form.
4 When the boiling syrup reaches 235ºF, remove it from the heat. Add gelatin and mix.
5 Pour the syrup into the whipping egg whites. Add the vanilla and continue whipping until stiff .
6 Divide the mixture into 3 parts. Color one batch orange and one batch black. Leave the third portion white. Transfer to loaf pans—one color per loaf pan—and set for at least 2 hours in room temperature.
7 Turn each pan over and unmold the marshmallows. With the cookie cutters, cut out ghosts from the white, pumpkins from the orange, and bats with the black. Arrange on a platter or wrap in small clear plastic bags.
