For Halloween, give your kids a real treat with these Homemade Marshmallows. Your little ones and their friends will surely ask for more!Makes 10 to 12 medium pieces   Prep Time 1 hour plus 2 hours setting time1/4 cup water1/2 cup light corn syrup1 1/2 cups sugar4 egg whites2 tablespoons powdered gelatin2 tablespoons cold water1/2 teaspoon pure vanilla extractblack and orange food coloring1  In a small bowl, dissolve gelatin in 2 tablespoons of cold water. Set aside.2  Combine 1/4 cup water, corn syrup, and sugar in a saucepan fitted with a candy thermometer. Bring to a boil until "soft-ball" stage or about 235ºF.3  Meanwhile, whip egg whites on medium speed until soft peaks form. 4  When the boiling syrup reaches 235ºF, remove it from the heat. Add gelatin and mix. 5  Pour the syrup into the whipping egg whites. Add the vanilla and continue whipping until stiff .6  Divide the mixture into 3 parts. Color one batch orange and one batch black. Leave the third portion white. Transfer to loaf pans—one color per loaf pan—and set for at least 2 hours in room temperature.7  Turn each pan over and unmold the marshmallows. With the cookie cutters, cut out ghosts from the white, pumpkins from the orange, and bats with the black. Arrange on a platter or wrap in small clear plastic bags.
