Freshly baked cookies are the best and your kids will love you to pieces when you make this classic treat right in your own kitchen. Add a bit of whimsy by coloring the filling with bright hues.
Makes 2 to 3 dozen Prep Time 20 minutes Baking Time 9 to 12 minutes
1/2 cup butter
1 cup all-purpose flour
1 cup sugar
1/2 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
For the filling
1/4 cup butter, at room temperature
1/4 cup shortening
1 1/4 cups confectioners’ sugar
1 teaspoon vanilla
1 Preheat oven to 350ºF.
2 In a food processor, mix together all the ingredients until they come together to form a dough.
3 Shape into balls and place on a cookie sheet leaving a two-inch gap in between cookies. Flatten a little and bake for 9 to 12 minutes. Let cookies cool.
4 While baking the cookies, prepare filling by creaming together all the ingredients in an electric mixer fitted with the paddle attachment.
5 Spread filling on one cookie and cover with another to make a sandwich. Repeat to make a total of 2 to 3 dozen.
Baking tip: You can shorten the baking time by 1 to 2 minutes for a softer and chewier cookie.
