Making your own chips is as easy as 1-2-3: Just slice, fry, and season. Aside from sweet potatoes, try other starchy veggies, like taro and pumpkin, which will make for an equally yummy crunchy snack.
Makes 4 to 5 cups
2 medium yellow, orange, or white sweet potatoes
3 cups vegetable oil
For the lime salt
2 teaspoons lime zest
2 teaspoons fine salt
1 Peel sweet potatoes. Slice thinly into rounds using a mandoline. Heat oil in a deep pan until a deep-fat fry thermometer registers 350ºF. Fry sweet potato slices in batches, until golden and crisp. Drain on paper towels.
2 Make the lime salt: Combine lime zest with salt. Sprinkle flavored salt on the chips.
