Horiatiki

This Greek salata is delicious in its simplicity. Serve with grilled baguette slices for a heftier dish.

Serves 4 to 5 Prep Time 20 minutes

 

 
8 tomatoes, cut into quarters
2 cucumbers, cut into large  cubes
2 tablespoons roughly chopped parsley
2 red onions, sliced thinly
2 green bell peppers, cut into cubes
2 tablespoons capers

6 tablespoons olive oil
2 tablespoons red wine vinegar
dried oregano, to taste
2 slices feta cheese
      (about 4 tablespoons), to serve
grilled baguette slices, to serve

 

1  In a bowl, combine tomatoes, cucumber, parsley, onions, bell peppers, and capers.

Drizzle with olive oil and red wine vinegar. Toss well. Sprinkle oregano.

Serve with a slice of feta on top and slice of baguette.
