Serve this to match Filipino dishes (grilled or fried fish, grilled pork belly, crispy pata, lechon kawali).
Serves 5 Prep Time 10 minutes Cooking Time 15 minutes
1/2 kilo raw jackfruit (langka)
1 cup vinegar
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 1/2 teaspoons minced ginger
2 red onions, sliced finely
2 finger chilies, sliced diagonally
4 tomatoes, sliced into rounds
1/2 cup coconut cream
1 Boil jackfruit (langka) until tender, about 10 to 15 minutes.
2 In a bowl, mix together vinegar, sugar, salt, and pepper. Add boiled jackfruit, ginger, onions, chilies, and tomatoes. Stir in cup coconut cream. Transfer to a serving bowl.
