Jambalaya Rice

Jambalaya Rice

This quick and easy version of Jambalaya has Hungarian sausage chunks and bell peppers. It's a fiesta of colors and flavors!

Serves 3 to 4 Prep Time 7 minutes Cooking Time 15 minutes

 

2 tablespoons olive oil
1 large onion, minced
2 green bell peppers, minced
2 tablespoon garlic, minced
2 Hungarian sausages, cubed
salt and pepper, to taste
1/4 cup tomato sauce
4 cups cooked rice
1 tablespoon Cajun Seasoning

 

In a pan, heat oil. Saute garlic and onions, until translucent. Add bell pepper then sausages. Add rice and tomato sauce. Add water as needed, to keep the rice from drying up. Toss. Add Cajun seasoning.

2  Serve as is or with Baked Chicken Tenders or Breaded Pork Chops.
