Local cheese and oranges go perfectly well with balsamic vinaigrette. If you have a bottle of pesto at home, drizzle on top of cheese, tomatoes and oranges for more flavor.
Serves 4 Prep Time 15 minutes
2 pieces Rizal kesong puti
2 ripe organic tomatoes
2 Sagada oranges, peeled
3 tablespoons extra virgin olive oil
1 1/2 tablespoons balsamic vinegar
salt and pepper to taste
1 Slice kesong puti, tomato, and oranges into equal-sized discs. Arrange in layers on a plate. Season with salt and pepper to taste.
2 In a small bowl, mix olive oil and balsamic vinegar. Pour this mixture over cheese, tomato and oranges. Garnish with basil leaves if desired.
