Key Lime Pie Bites

Key Lime Pie Bites

Counting calories but still want to have dessert? Make small portions, like mini pies, so you can indulge without guilt.

Makes 6

 

1 cup crushed graham crackers
2 tablespoons caster sugar
1/4 cup melted butter
4 egg yolks (from small eggs)
1 can condensed milk
1/2 cup lime juice
whipped cream for topping
lime zest for garnish

 

In a bowl, whisk together crushed graham and sugar. Gradually add melted butter. Mix until butter is well distributed. Divide into cups and form into crust. Set aside in chiller to harden.

Make the filling: In a bowl, beat yolks until light in color and fluffy. Beat in milk. Add lime juice and mix until well incorporated. Pour filling into prepared crusts.

Bake for 10 to 15 minutes in a preheated 350ºF oven. Cool completely and store in chiller overnight.

To serve, top with whipped cream and lime zest.
