Makes 6
1 cup crushed graham crackers
2 tablespoons caster sugar
1/4 cup melted butter
4 egg yolks (from small eggs)
1 can condensed milk
1/2 cup lime juice
whipped cream for topping
lime zest for garnish
1 In a bowl, whisk together crushed graham and sugar. Gradually add melted butter. Mix until butter is well distributed. Divide into cups and form into crust. Set aside in chiller to harden.
2 Make the filling: In a bowl, beat yolks until light in color and fluffy. Beat in milk. Add lime juice and mix until well incorporated. Pour filling into prepared crusts.
3 Bake for 10 to 15 minutes in a preheated 350ºF oven. Cool completely and store in chiller overnight.
4 To serve, top with whipped cream and lime zest.
