A wonderful cookie treat that tastes like cake. Have it at your leisure, with coffee or tea.
Yield 24 pieces
Prep Time 15 minutes
Baking Time 10 to 15 minutes
1 cup + 2 tablespoons sugar
1 teaspoon vanilla extract
1 grated orange or lemon zest
pinch of salt
2 cups sifted all-purpose flour
1 cup unsalted butter, melted and cooled
1 Preheat oven to 375ºF to 400ºF. Grease and flour 2 to 3 madeleine mold pans. Set aside.
2 Beat eggs, sugar, vanilla extract, orange zest, and salt until light. Fold in flour and melted butter alternately.
3 Pipe the batter into prepared madeleine molds. Bake for 10 to 15 minutes or until done.
