A wonderful cookie treat that tastes like cake. Have it at your leisure, with coffee or tea. For the brown butter version, see Brown Butter Madeleines
Makes 24 pieces
Prep Time 15 minutes
Baking Time 10 to 15 minutes
1 cup + 2 tablespoons sugar
1 teaspoon vanilla extract
1 grated orange or lemon zest
pinch of salt
2 cups sifted all-purpose flour
1 cup unsalted butter, melted and cooled
1 Preheat oven to 375ºF to 400ºF. Grease and flour 2 to 3 madeleine mold pans. Set aside.
2 Beat eggs, sugar, vanilla extract, orange zest, and salt until light. Fold in flour and melted butter alternately.
3 Pipe the batter into prepared madeleine molds. Bake for 10 to 15 minutes or until done.
