Sausage aficionado? For a little less ordinary meal, brush your favorite sausage with a sweet, fruity glaze.
Serves 4
1/4 cup mango jam
3 tablespoons water or chicken stock
salt and pepper to taste
pinch of pepper flakes
1 teaspoon oil
1 red bell pepper, cut into 1x1-inch squares
6 sausages (any type, like German franks or Hungarian), sliced into 1-inch-thick pieces
1 Make the glaze: In a bowl, whisk together mango jam, water, and seasonings; set aside.
2 Heat oil in a nonstick pan. Saute bell peppers for 1 minute. Add the sausage slices and fry until lightly browned. Pour glaze into pan and simmer for 2 to 3 minutes or until thick. Alternately skewer the sausage slices and bell peppers onto sticks, then serve excess glaze in a ramekin or small bowl on the side for dipping.
