Pair our local yam, gabi, with the Mediterranean flavors of oregano and thyme herbs to produce one winning snack idea.

Serves 6 to 8

 

3 pieces gabi
2 tablespoons olive oil
1 teaspsoon dried oregano
1/4 teaspoon dried thyme

For the Bean and Corn Salsa
1/2 cup kidney beans
1/3 cup corn kernels
1/3 cup diced tomatoes
2 tablespoons diced red onions
1 tablespoon extra virgin olive oil
juice from half a lemon
pinch of sugar
salt and pepper, to taste

 

Preheat oven to 275ºF.

Clean, peel, and wash gabi. Slice into thin rounds using a mandoline.

In a bowl, mix together olive oil, oregano, and thyme. Toss gabi slices in mixture until well coated. Arrange slices in one layer on a rack on top of a lined baking tray.

Bake in the oven for 30 to 40 minutes or until crisp.

Make the Bean and Corn Salsa: Mix together kidney beans, corn kernels, tomatoes, red onions, olive oil, lemon juice, and sugar. Season with salt and pepper. (For more salsa recipes, click salsa recipes)

Store in an airtight container.
