Pair our local yam, gabi, with the Mediterranean flavors of oregano and thyme herbs to produce one winning snack idea.
Serves 6 to 8
3 pieces gabi
2 tablespoons olive oil
1 teaspsoon dried oregano
1/4 teaspoon dried thyme
For the Bean and Corn Salsa
1/2 cup kidney beans
1/3 cup corn kernels
1/3 cup diced tomatoes
2 tablespoons diced red onions
1 tablespoon extra virgin olive oil
juice from half a lemon
pinch of sugar
salt and pepper, to taste
1 Preheat oven to 275ºF.
2 Clean, peel, and wash gabi. Slice into thin rounds using a mandoline.
3 In a bowl, mix together olive oil, oregano, and thyme. Toss gabi slices in mixture until well coated. Arrange slices in one layer on a rack on top of a lined baking tray. Bake in the oven for 30 to 40 minutes or until crisp. Store in an airtight container.
4 Make the Bean and Corn Salsa: Mix together kidney beans, corn kernels, tomatoes, red onions, olive oil, lemon juice, and sugar. Season with salt and pepper. (For more salsa recipes, click salsa recipes)
