Pork tenderloin is your best bet when you're cooking in a hurry as it cooks real fast.Serves 4  Prep Time 10 minutes  Cooking Time 20 minutes1/2 kilo pork tenderloin fillet salt and pepper1/2 tablespoon cuminjuice of half a lemon1/2 cup all-purpose flouroil1 cup red wine1/2 cup sliced fresh button mushrooms1 can diced tomatoes1/4 cup sliced green olives1  Season  pork tenderloin fillet with salt and pepper, cumin, and lemon juice. Set aside for 10 minutes.2 Dredge pork in flour then pan-fry in hot oil until brown on both sides. Set aside. 3  Deglaze pan with wine. Simmer for a few minutes then add mushrooms, tomatoes, and olives. Bring mixture to a boil.4  Return pork fillets to the pan. Simmer until pork is cooked through and sauce is reduced.
