Pork tenderloin is your best bet when you're cooking in a hurry as it cooks real fast.
Serves 4 Prep Time 10 minutes Cooking Time 20 minutes
1/2 kilo pork tenderloin fillet
salt and pepper
1/2 tablespoon cumin
juice of half a lemon
1/2 cup all-purpose flour
oil
1 cup red wine
1/2 cup sliced fresh button mushrooms
1 can diced tomatoes
1/4 cup sliced green olives
1 Season pork tenderloin fillet with salt and pepper, cumin, and lemon juice. Set aside for 10 minutes.
2 Dredge pork in flour then pan-fry in hot oil until brown on both sides. Set aside.
3 Deglaze pan with wine. Simmer for a few minutes then add mushrooms, tomatoes, and olives. Bring mixture to a boil.
4 Return pork fillets to the pan. Simmer until pork is cooked through and sauce is reduced. Season sauce to taste.
