Miso-Glazed Salmon



Miso-Glazed Salmon

Give teriyaki sauce a break. Instead, go for this elegant miso glaze, a lovely flavor match to fish. It works well with sea bass and black cod too!

Serves
2 to 3   Prep Time 10 minutes   Cooking Time 15 minutes

 

1/2 cup brown sugar
1/4 cup light soy sauce
1/4 cup mirin
1/4 cup miso paste
corn oil for brushing
4 (180-gram) pieces salmon fillet
blanched bok choy, to serve

 

In a bowl, mix together brown sugar, soy sauce, mirin, and miso paste.

Brush oil on a baking dish. Arrange salmon on the dish. Spoon ¾ of the miso mixture over both sides of the fish.

Cook fish in the turbo broiler at 375ºF for about 15 minutes, basting the fish twice with the remaining miso mixture. Serve with blanched bok choy seasoned with sesame oil
