Give teriyaki sauce a break. Instead, go for this elegant miso glaze, a lovely flavor match to fish. It works well with sea bass and black cod too!
Serves 2 to 3 Prep Time 10 minutes Cooking Time 15 minutes
1/2 cup brown sugar
1/4 cup light soy sauce
1/4 cup mirin
1/4 cup miso paste
corn oil for brushing
4 (180-gram) pieces salmon fillet
blanched bok choy, to serve
1 In a bowl, mix together brown sugar, soy sauce, mirin, and miso paste.
2 Brush oil on a baking dish. Arrange salmon on the dish. Spoon ¾ of the miso mixture over both sides of the fish.
3 Cook fish in the turbo broiler at 375ºF for about 15 minutes, basting the fish twice with the remaining miso mixture. Serve with blanched bok choy seasoned with sesame oil
