These party-ready appetizers are guaranteed crowd-pleasers!
Serves 8 to 12
For the burger patty
2 pieces Italian sausage
(about 300 grams), casing removed
1/4 kilo ground pork
1/2 cup chopped spring onions
2 small eggs, beaten
1/4 cup breadcrumbs
salt and pepper to season
1 (250-gram) pack pancake mix,
according to package directions
alfalfa sprouts
slices of cheese
cherry tomato slices
maple barbecue sauce (optional) (see tip below)
1 Make the burger patty: In a bowl, mix together Italian sausage, ground pork, spring onions, eggs, and breadcrumbs; season with salt and pepper. Shape into 1 1/2-inch balls and flatten. Set aside in chiller.
2 Cook pancakes in a nonstick pan, shaping them into about 2-inch rounds. Set aside. Pan-fry the burgers until browned.
3 To assemble, top a pancake with some alfalfa sprouts then top with a burger patty. Follow with a slice of cheese and cherry tomato slices. Cover with another pancake. Repeat until done. If desired, serve with maple barbecue sauce (see tip below).
Saucy tip: To make the maple-barbecue sauce: Just mix 2 tablespoons maple syrup into 1/2 cup of your favorite barbecue sauce.
