If you need to serve something easy but impressive, this is your best bet.
Serves 4 to 5 Prep Time 20 minutes Cook Time 10 to 15 minutes
1 kilo prawns
salt, pepper, and lemon juice (to season the prawns)
1 500-gram pack spaghettini noodles
1/2 cup garlic slivers
1/2 cup extra virgin olive oil
3 tablespoons XO sauce (hot or mild, depending on your preference)
2 tablespoons oyster sauce
1 tablespoon kecap manis
3 tablespoons fish stock
salt and pepper to taste
Parmesan cheese, shaved
1 Season prawns with salt, pepper, and lemon juice and let it sit for about 10 minutes.
2 Cook the noodles according to package directions. Once cooked, drizzle noodles with a small amount of oil and set aside.
3 In a heavy pan, sauté garlic in oil for about 2 minutes. Add prawns and when they are half-cooked, stir in the XO sauce, oyster sauce, kecap manis, and stock. Season to taste.
4 Mix in the noodles. Top with shaved Parmesan before serving.
