Pumpkin Raisin Cookies

Pumpkin Raisin Cookies

Chewy on the inside, crispy on the edges! Raisins, maple extract, and just the right mix of spices make these cookies simply irresistible.

Makes 2 dozen cookies  Prep Time 15 minutes  Baking Time 12 to 15 minutes

 

2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
3/4 cup butter, at room temperature
1/2 cup sugar
1 cup brown sugar
2 small eggs
1 teaspoon maple extract
1 1/3  cups canned pumpkin (1 can), mashed

 

1  Sift together flour, baking powder, salt, cinnamon, and nutmeg.

2  Cream together butter, sugar, and brown sugar. Add eggs, one at a time. Pour in maple extract. Then fold in canned pumpkin, mashed. Scoop the dough into balls and bake in a preheated 350ºF oven for 12 to 15 minutes.
