This Mexican cheese fondue is as simple as it is delicious. Serve this during game night or as a starter at your next cocktail party. It'll be wiped out in minutes!
Serves 6
1 tablespoon oil for sauteing
1/3 cup chopped onions
2 finely chopped and seeded finger chilies;
1/3 cup beer
226 grams (about 3 cups) grated Monterey Jack cheese or any melting cheese
1/3 cup store-bought salsa
1/4 cup chopped cilantro
salt to taste
corn tortillas or your chips of choice
1 Heat oil in a medium saucepan. Saute onions until translucent. Add chilies; cook for half a minute. Add beer and reduce to half. Stir in cheese cheese; cook over low heat until melted. Add salsa and cilantro. Season with salt to taste.
2 Transfer to a serving dish and serve immediately with corn tortillas or your chips of choice.
