Perfect for a very Mexican celebration
Makes about 3 cups Prep Time 15 minutes
4 large ripe salad tomatoes, seeded and diced
1/2 medium red onion, diced finely
1/3 cup cilantro, chopped
1/4 cup fresh lime juice
salt and pepper to taste
1 In a large bowl, combine all ingredients (except the lime juice and salt and pepper) up to 6 hours ahead of time.
2 Just before serving, stir in the lime juice and season to taste with salt and pepper. Serve immediately.
